Peach & Gorgonzola Salad with Blackberry Vinaigrette
Salad
1/2 Large yellow peach
1/4 Cup crumbled Gorgonzola
1/4 Cup slivered almonds
2 Cups mixed green lettuce
Blackberry Vinaigrette
3-4 Blackberries
1 tsp. salt
2 Tbsp. Maple Syrup
1/8 Cup Olive Oil
1/4 Cup Blackberry Vinegar
2 tsp. Lemon Zest
For the Vinaigrette:
Mash blackberries, salt and olive oil together in a small or medium bowl, until blackberries are broken apart, but you can still see the berry kernels.
Whisk in Maple syrup, vinegar, and lemon zest.
Assembling the salad:
In your favorite salad bowl or platter place a nice layer of mixed greens, top the mixed greens with peach slices, slivered almonds, and crumbled gorgonzola.
Lightly drizzle the vinaigrette over the top with a medium sized spoon, until evenly dressed.
